Frickadella!

Excuse my French. Just kidding, it’s German! And it’s not a curse word!

My dad decided to try out some recipes he had brought back from Germany on us.  Frickadella is similar to meatloaf consisting of minced meat with onions, eggs, milk, and bread crumbs. It is a popular dish in Germany but from Danish heritage. They are pretty tasty!

My dad did a good job, though I have nothing to compare it to since I’ve never had it before. I’m not a huge fan of meatloaf but this was good and I ate all of it! So that says something.

He also made Spargelsuppe, or white asparagus soup. It is a delicacy in Germany during the springtime. White asparagus is only in harvest during that time. I have been to Germany twice to visit my dad when it’s in harvest and have actually tried this dish before. It’s one of my favorite soups! My dad brought back a mix of it from Germany but apparently at Commissaries you can buy canned white asparagus so he removed the dried pieces of asparagus and added the canned ones to make the soup fuller. It was good!

If you ever get a chance to try this soup, you should! Here‘s a recipe that sounds pretty good that I found online. If you have access to a Commissary you can pick up some of the canned white asparagus (I think it’s Reese brand?), or ask you grocer if they can order it in if they don’t have it.

Woohoo, even with pie I was under!  I was pretty hungry for most of the day until I had the soup and Frickadella. I had them pretty close together so I don’t know if you could call the soup lunch at 4 in the afternoon.

Workout Report:

This just in! I didn’t work out! Let’s be honest — no surprise there. I was moving more stuff so I “didn’t find time” to workout. Lame excuse I know. It’s been raining though and running just doesn’t sound appealing. I should be doing indoor exercises though. Maybe I’ll get on that tonight. Wish me luck motivation!

 

 

Chipotle Raspberry Salmon and Pecan Pie

I feel like I ate a feast yesterday! I have lots of tasty recipes to share!

First let me brag about my pecan pie. This is the second time I’ve made this recipe and it is always a hit. This pecan pie does not require any corn syrup but tastes just as good! It’s from allrecipes.com. It is really easy to make.  The first time I made it, I didn’t mix in the pecans, I just placed them on top after pouring the mix into the pie shell. This time I decided to follow their directions and mix the pecans in. It ends up creating this delicious flaky crust on top.

This allows for the pecans to be mixed in more with the gooey innards of the pie.

Pecan pie is my favorite kind of pie. It always sounds good to me!

For dinner we had some left over raspberry sauce at my parent’s house from a previous time of making the Chipotle Raspberry Black Bean Dip so we decided to use that with salmon. There’s actually a recipe suggestion on the bottle of Bronco Bob’s that explains how to use it as a marinade for grilling salmon.  We grilled at 350 degrees F for about 8 minutes on the first side and then flipped it for 3 more minutes. We were gonna flip sooner but it didn’t look ready so we waited. I think it was cooked a little longer than necessary but it turned out great!

Definitely gonna keep this recipe in mind the next time we cook salmon. This could even be made in a skillet if you don’t have a grill using medium-high heat. Sooooo good!

If it wasn’t for the pie, I’d be under my calories. However, I worked out yesterday! Daniel and I ran about 3 miles (not many hills this time). So that’s about 300 calories right there burned.

Later that night we went to watch some friends perform at a local bar with their band, Skip Trip Fly. They were great!
