Labor Day Lazy

Yesterday I was suuuuuuuper lazy. Daniel and I didn’t do much all day. We started off by making these tasty breakfast tacos with eggs, green pepper, cucumber, cheese, and mango salsa.

I was starving so I ate three and a half.

Needless to say, I did not work out yesterday.  But we did have a delicious dinner!

We stopped by Wal-Mart and picked up some spinach tortellini. We added some chopped up chicken, vodka sauce, and some veggies. Delicious!

Shouldn’t have had the Green Tea Blender but it woke me up!  It was from the Hardback Cafe (connected to Hastings). Basically a frappucino. Only better.  Ok, they’re both pretty good. I’m just on a green tea kick!

Well after my first day of work, I’m ready to relax! I mean, do homework…. Have a great Tuesday night!

Make You Strawberry/Blueberry Pancakes…

…Pretend like it’s the weekend now. Jack Johnson anyone? Ok, the song is banana pancakes, but I had something even better. Strawberry/blueberry pancakes! Seriously, kids, try this at home.

So yesterday I actually mustered the strength to work out again. Daniel was being lazy so I went on a run with out him. In my neighborhood there are a lot of hills nearby to run up so I took advantage of that. What a workout! My Endomondo app said I ran 2.10 miles. Not much, but with the hills and the heat it was all I could handle. It was a little over 200 calories burned.

As I mentioned yesterday, my arugula fiasco continued with a smoothie. After my run I needed some protein so I made my fruit smoothie. This time I added some frozen blue berries and I didn’t have just spinach so I added the spinach/arugula mix.  When you first taste the smoothie you’re all like “Mmm fruity” and then you’re all like “what IS that?!?” and then you gag. I hate to waste food though so I plugged my nose as I drank it and quickly followed with a chaser of water.

The lunch and dinner were made courtesy of Daniel.  In the eggs he added parsley, basil, and red pepper. For the pancakes, Daniel used the Krusteaz Buttermilk mix. It’s is delicious! This time he added blueberries and strawberries to them. This is my new favorite way to make them. Soooo sooo good!

For dinner, he boiled the tortellini per instructions.

For the sauce he added a roma tomato, the spinach/arugula mix (luckily you couldn’t taste the arugula this time), oregano, basil, parsley, garlic powder, onion powder, and garlic salt. Basically, he added all the spices we own. Then, he added the pre-cooked shrimp.

And then what’s dinner without a little wine? We bought this green chile wine from New Mexico a few months back when we were visiting my best friend and her husband.  She introduced us to it, saying we needed to try it because it’s “unique.” That really is the best way to explain it.  It’s a white wine with a strong aftertaste of green chile.  I don’t think you can buy it in the midwest so we stocked up with 3 bottles. It was $7 at Wal-Mart!
