Chipotle Raspberry Salmon and Pecan Pie

I feel like I ate a feast yesterday! I have lots of tasty recipes to share!

First let me brag about my pecan pie. This is the second time I’ve made this recipe and it is always a hit. This pecan pie does not require any corn syrup but tastes just as good! It’s from allrecipes.com. It is really easy to make.  The first time I made it, I didn’t mix in the pecans, I just placed them on top after pouring the mix into the pie shell. This time I decided to follow their directions and mix the pecans in. It ends up creating this delicious flaky crust on top.

This allows for the pecans to be mixed in more with the gooey innards of the pie.

Pecan pie is my favorite kind of pie. It always sounds good to me!

For dinner we had some left over raspberry sauce at my parent’s house from a previous time of making the Chipotle Raspberry Black Bean Dip so we decided to use that with salmon. There’s actually a recipe suggestion on the bottle of Bronco Bob’s that explains how to use it as a marinade for grilling salmon.  We grilled at 350 degrees F for about 8 minutes on the first side and then flipped it for 3 more minutes. We were gonna flip sooner but it didn’t look ready so we waited. I think it was cooked a little longer than necessary but it turned out great!

Definitely gonna keep this recipe in mind the next time we cook salmon. This could even be made in a skillet if you don’t have a grill using medium-high heat. Sooooo good!

If it wasn’t for the pie, I’d be under my calories. However, I worked out yesterday! Daniel and I ran about 3 miles (not many hills this time). So that’s about 300 calories right there burned.

Later that night we went to watch some friends perform at a local bar with their band, Skip Trip Fly. They were great!

  1. Why on earth are u only eating 1200 calories or less? You are 23…do u even realize how many calories u truly need??

    • For my age, height, and weight, to consistently lose 1-2 pounds/week I need 1200 calories/day (including exercise). Depending on your body type and activity level you can easily be full off of 1200 calories if you’re consuming nutrient dense food such as fruits and vegetables. To maintain my weight I would need 1400-1500 calories a day. You can read more about this and my goals here.

  2. Your pecan pie looks YUMMY! It’s funny, I used to never like pecan pie. My mom and grandma have always loved it, and they used to tell me that one day my tastebuds would change & I’d wind up liking it…and they were right! It reminds me of Christmastime because my grandma always makes it for the holidays.

      That’s awesome, it reminds me of the holidays too! We’d always have store bought though, until I found this recipe! I stumbled upon it last summer when a friend said they had never had pecan pie before and I couldn’t find pecan pie in the store. Who knew it wasn’t a hot seller in the summer?! It’s delicious any time of the year!
